Interesting fish. First of all even after all this time, they are just so
damned skittish. Even when eating they dart up and then, back down again
like lightning. The bigger one dominates and chases the smaller all day. Now
that that she just laid eggs, she can't get him/her to get involved at all.
She shakes and shimmy's to attract him but he's terrified of her.

You need to add some "dither fish" to the tank.
The Cichlids will then soon overcome their nervousness and skittish
behavior.

What do you recommend? Will they become punching bags?

You obviously need something that can get out of the way fast.
My immediate thought's go to danio's - zeabra or giant danio's

A quick google scan finds:
http://aqualandpetsplus.com/Cichlid,%20Green%20Terror.htm

2 extracts from there:

a: Tank Mates. When small, green terrors mix with any number of small
cichlids as well as other speedy tank mates. We recommend barbs.

b: Dither Fish Secret. Adding a perceived outside threat, adds to the
green terrors’ tendency to bond together. Convict cichlids make an
excellent dither fish candidate. They like to argue and can run away at
escape velocity. Do not add a male and female convict or they will breed
all other fishes out of house and home.

Yes I've had convicts breed right in the middle of a 55 swarming with
other cichlids.
