I had, a couple of hours earlier, dipped an arm into the tank and
scrubbed the corners and substrate line with a handheld scrubby-
sponge. That always upsets the fish a bit (no wonder, lol), but they
get over it pretty quickly. Could fear/upset force them to hide out
like that?

Sure fish can be scared enough to go into hiding from a simple algae
scrub.
Another possibility can be something most people wouldn't think of
when it comes to a fish....
Drowning. Bettas, as well as any air breathing anabantid fish, can
drown if they are unable to reach the surface for a gulp of air.
I wonder if this Betta became frightened and got himself stuck.
Yrs ago I had a large, thick patch of Java Moss in a 29g that was
attached to a chunk of driftwood.
It was so pretty because of how thick and dense the moss was. A batch
of young, sibling females Bettas were added and one of them got
herself stuck in the middle of it. I had to untangle her.
I figured it was a freak accident because noting like that had
happened before with the Java Moss.
The next morning she was dead, stuck int he middle of it, and tangle
good.
These were my own betta fry that I had raised, so I know they were
100% healthy, and so was the tank so disease was not an issue.
No damage to the body or fins, just stuck in the moss. When trying to
get her out of it, it became obvious how stuck she was.
So I removed the java moss too. I didn't want anything like that
happening again.
Now if I have java moss it's kept loose in the tank (for spawnig
purposes).
