One of the funny things to see at a Yuppie dinner :
A whole Yabbie on a bed of rice, with only a small entree fork to attack it
(Instead of a pair of pliers and a hammer)

Nope, it is the New Jersey variety. I did some research on them.and
found some photos. Incidentally, any idea how I can get them to turn
blue again?

I hope you did more than look at photo's to tell the species. The only way
to tell is to look at a form 1 males gonopods. Anything else is just
guessing.

I am sure you are right, since the web link I followed to find the pics
was from one of your posts. One thing I know for sure is that it is
not a Yabby.
