I have the same problem. A tapping or knocking sound but both at night and
during the day. No signs of a shrimp, either pistol or mantis, and as it
turned out it wasn't a shrimp. It was my large bengai cardinal. He makes
this loud popping noise with his mouth to scare/intimidate the other fish.

Mantis Shrimp, right .. ?

On a side note, if you do capture this you may be able to sell/trade it for
something good. There are many folks who like keeping these terrors :)

Something else... if you have Florida Live Rock it also could be a
"mussel"(for the lack of the proper
species name) attached to the rock. I've had what I'm almost sure was
them snapping.

But a Pistol or Mantis can be very leery of people and might be hard to
catch a glimpse of
if your not crafty.

In the middle of the night, break out a small pen flashlight, creep up
softly to the tank
and look around. You might be surprised what you will see.

I have a similar clicking/tapping noise that is caused by my hermit crabs
walking beside the glass, their shell tapping against the glass.

It could also be a snail crawling on a powerhead. The shell
vibrates against your glass, causing the sound you hear.
