I got a couple of red tailed sharks last week (I was after some
cichlids and these were in the same tank at LFS.. figured they must get
on with each other based on that).

One of them is fine... it's taken a liking to snacking on algae (which
means it isn't competing for food with the other fish - a good thing I
guess). The other one seems to have lost its tail colour today... I
believe this means it's stressed in some way.

Would adding more hiding places help? Or is it just not going to work
having 2 of these things at once (35 gallon tank, so there's a
reasonable amount of space for them to coexist).

It's not going to work having two, IMHO, they're very territorial. :-(
The least dominant one (the one that's looking sorry for itself) will
eventually be harried to death - if I were you I'd find another home for it
quickly.
I'm surprised the retailer sold you 2 in the first place...

They're priced in pairs, and I was positively encouraged to buy more
than one (typically for an LFS they didn't ask any questions, just
bagged them up and took the money. I know they're crap, but I've never
had a sick fish from there, so whoever's looking after the tanks knows
what they're doing at least, even if the assistants are clueless).

The other one seems to have recovered now, but I don't know how long
for... I arranged for some more hiding places anyway. It's staked out
a corner and the other one seems to be content to leave it there.

most good retailers would have told you buy one or more than two.
The dominant one will harass the other till it dies or fades away.
Ask the shop to take one back.(the faded one)
